Month in Review: October

since it’s been a while since i’ve really sat down and properly blogged, i decided that i’m not even going to try to recap all that’s been going on. instead, i’m going to do a list of sorts and let you in on a few of the hightlights.

ready?

  • i got a new camera. and it’s awesome. hopefully you have noticed that the pictures are better, brighter, and just a tad more clear. if not, please lie and tell me that you have.
  • nemacolin is an amazing place to be. particularly if you have food allergies, sensitivities, or are just damn picky. they provided me with the best meal out since i’ve been diagnosed with food intolerances. i had a great fruit plate, salad, pasta, and dessert. and i didn’t even ask for it. i was stuffed and ridiculously happy. makes me want to go back. often.
  • toronto is my new favorite city of all time. it was a true pleasure to be there and not have to worry about eating. my favorite stop was fresh [of cookbook fame] on spadina, where i had a jerusalem bowl and a macro green bowl. we also had a great dairy-free brunch at the lakeview restaurant [imagine soy pancakes and fresh fruit]. did i mention the awesome vibe of the place? or the amazing shopping? yeah. it’s all there.
  • i started my program at IIN and have finished all of my fundamental classes [phew!]. i’m still getting through the first module, and finally received my books. can’t wait to get immersed in the program and kick some major nutritional arse.
  • i got to do my first product review. oh yeah.
  • i got to do my second product review. oh yeah.
  • i’ve gotten back into cooking again after an evil slump. and it’s been fun. we’ve had peanutty noodles, pasta with beans, lentil burgers, homemade bread, and strawberry muffins. we’ve even been brave and tried bok choy [loved], with brussel sprouts and quince next on the list.
  • i’ve been continuing with cellular expansion and am really enjoying the process.
  • i found that bradley international airport and dulles international aiport in washington dc have some vegetarian and vegan options for food. i still couldn’t eat them [tomatoes and peppers], but it was refreshing to see!
  • i am trying to work through the artisan bread in 5 minutes book and have gotten through two recipes. hey. you have to start somewhere. i liked the book so much that i even got a copy for  my SIL for her birthday.
  • my SIL got me two awesome cookbooks: vegan italiano and babycakes for my birthday and am intrigued by both. though, did see that a lot of the recipes in babycakes uses potato flour and starch due to the gluten-free nature of the book. [side question - can you substitute all-purpose flour for gluten-free all-purpose flour?]

that’s about all i can stand. or remember. i’m sure i’ll think of 7 or 8 more points in a day or so. oh well…that’s my story. and i’m sticking to it.
