Recipe: Oatmeal Raisin Cookies

i’ve had a quiet love affair with oatmeal raisin cookies for quite a while now. yes, i love chocolate chip cookies. i even love a good sugar cookie. but oatmeal raisin has my heart.
they remind me a lot of the hubster: quietly confident. they don’t need to shout their virtue, or tell people how healthy they are. they just know they’re good and will let others come to their own conclusions.
this recipe was no exception. and made me incredibly happy to have a little treat at the thanksgiving table while everyone else was eating pumpkin pie and apple cranberry pie [which looked divine, by the way].
the original inpsiration for this recipe: back of the quaker oats box. oh yeah.
dairy-free oatmeal raisin cookies
ingredients:
- 1/2 lb. (2 sticks) earth balance, softened
- 1 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cups unbleached all-purpose wheat flour
- 1 tsp. baking soda
- 1/2 tsp. sal
- 3 cups rolled oats
- 1 cup raisins
directions:
- heat oven to 350°F.
- beat together earth balance and sugars until creamy.
- add eggs and vanilla; beat well.
- whisk together flour, baking soda, and salt.
- add flour mixture to wet ingredients [earth balance, sugar, eggs, vanilla]. beat well.
- stir in oats and raisins [by hand]; mix well.
- drop by rounded tablespoonfuls onto an ungreased cookie sheet.
- bake for 10 to 12 minutes or until golden brown.
- cool 1 minute on cookie sheet; remove to wire rack.
makes about 4 dozen. and freezes well just in case you can’t eat that many in one sitting.
this recipe is vegetarian, dairy-free, nightshade free, cinnamon free, and contains no MSG.
