Pasta Skillet with Tomatoes and Beans

this is a tasty recipe from CookingLight that we love to make in our newly veggie household. i have had this recipe for quite a while but never thought i [or the hubster] would like it…guess i was wrong about that!
Pasta Skillet with Tomatoes and Beans
Ingredients
2 teaspoons olive oil
2 cups chopped tomato
2 garlic cloves, minced
3 cups hot cooked angel hair*
1/2 cup chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15 1/2-ounce) can chickpeas, drained
2 tablespoons balsamic vinegar
1/2 cup grated Asiago cheese (optional)
Basil sprigs (optional)
*can you use any kind of pasta you want…
Preparation:
Heat oil in a large nonstick skillet over medium-high heat. Add tomato and garlic, and sauté 2 minutes. Add pasta, basil, salt, pepper, and chickpeas; cook 2 minutes. Place mixture in a bowl; stir in cheese and vinegar, and garnish with basil, if desired.
Yields 4 servings (serving size: 1 1/4 cups)

First of all I have to say, I LOVE the pictures you are using on your site, they are hilarious! Secondly I read your whole blog, it was that interesting! But I didnt see anywhere that that it explained to the readers,…..Why did you become a vegetarian. I mean this is a mention in the second post about your hubby, but there is no back story. I would like to read about that! I am not a vegetarian, but I am trying to cut back on eating meat for the environment.
And I might try the recipes you have listed!
