Happy [Belated] Tofurkey Day

hope you had a tasty tofurkey day yesterday. for those that actually celebrate it, that is.

we spent the evening dining with family. and of course, we are the only veggies in the fam. so, i got to make us a main dish. no tofurkey for us. though not sure i would have cooked if we played host. tofu still scares me. and anything that is flavored to taste like actual meat scares me even more.

the hubster decided that he wanted a nice butternut squash risotto. so, being the doting wife that i am, i obliged. and we got to eat a gloriously satisfying meal. topped with mashed potatoes, sweet potatoes, and bread. [i don't think i could have had more starch in one meal if i tried!]

for dessert, we brought a nice loaf of pumpkin bread. though, much to my mother’s chagrin, not the family recipe for pumpkin bread. i honestly didn’t know i had the recipe. and by the time i talked to my mother i had already made two loaves and didn’t have enough eggs to try again. [good news, mom: i have plenty of pumpkin puree to make another few batches. so, no fear. the family bread will be made.]

hope you had a great thanksgiving. and got to spend it with the ones you love the most! or at least, despise the least.
