Recipe: Easy Sugar Cookies
Posted on | December 19, 2008 | 11 Comments
now. i don’t post about dessert often. and that is because i don’t bake. why is that, you ask. for a few reasons actually.
one, i suck at it. and i’m not just saying to get pity. i really suck at it. as in really. i can’t tell you the number of times i have ruined something. including last night before i made the sugar cookies. and not just one time, but two. [it was peppermint bark in case you care. supposed to be easy. and i still found a way to royally eff it up.]
which brings me to my next reason. baking makes me angry. probably because i do suck at it. but it makes me want to hurl things out the window and scream at everything around me. including adorable little kitkats and supportive and loving hubsters. not. good.
the final reason i will share today is that i like sweets. a little too much. and if it’s good, all i do is eat said treats. and then i get fat. which then would cause the aforementioned reason [er, number 2] to rear its ugly head: it makes me angry.
having said all that, this recipe is amazing. it was incredibly easy. and not easy like the peppermint bark fiasco. easy, as in anyone could do this. including me. feel free to tweak it as you like. i did a little myself.
Easy Sugar Cookies
Prep Time: 15 Minutes
Cook Time: 10 Minutes
Ready In: 25 Minutes
Yields: 48 servings
Ingredients:
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup margerine, softened
- 1 1/2 cups white sugar
- 1 egg
- 2 teaspoon vanilla extract
Directions:
- Preheat oven to 375 degrees F (190 degrees C).
- In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth.
- Beat in egg and vanilla.
- Gradually blend in the dry ingredients.
- Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
- Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet five minutes before removing to cool on wire racks. [they break otherwise...i learned the hard way.]
* if you want to sprinkle sugar on top, i won’t stop you. but i do recommend pulling them out at around 5 minute to do so. it adds a nice little treat.

I’m makin’ these today after lunch. Mr. Nix will be so pleased.
And not to worry, I will pass judgment on you for the recipe immediately after eating some cookies. Ha ha. Thanks for putting this up. The husband loves sugar cookies, and he totally deserves some.
