The Reluctant Vegetarian

hello. my name is emily and i used to eat meat. that all changed in the summer of 2008 when the hubster [aka my partner in crime] woke up and decided he wanted to be a vegetarian.

i had a choice to make. i could either continue on with my merry meat-eating habits, making two lovely dinners each night. or. i could become a vegetarian with him…at home.

i chose the latter. the thought of cooking twice the fun each night was terrifying. and there i was pushed, reluctantly, into becoming a flexitarian vegetarian.

and so the journey [and blog] began.

it would seem that the story ends there. but it doesn’t. in early 2009, i was diagnosed with a slew of food intolerances: the nightshade family [tomatoes, white potatoes, peppers of any kind, eggplant, paprika, chili powder, cayene pepper], dairy and casein, cinnamon, and msg.

what started with a seemingly uncomplicated dietary change turned into a massive overhaul of my life. we have changed every single aspect of how we eat, cook, and relate to food. i quit my job. and became the healthiest i have ever been [take that stupid migraines].

having been able to experience first hand the way that food can hurt us and heal us, i knew i needed to share this with others. so i became a health coach.

and so the journey continues. each day. with each meal. and for that, i am grateful.
